I wrote this recipe up for a friend of mine on Facebook, so I thought I might as well post it here, too!
I threw it together when I made it, but my family enjoyed it. I THINK it was something like this!
Apple Cranberry Curry Couscous
Boil 1.5 cups lightly salted water in a saucepan.
Add 2 cups dry couscous, a couple handfuls of dried craisins, and a couple of handfuls of finely chopped apples (skin on is fine).
Stir in curry according to taste – I used about 1/2 to 1 tbsp.
Remove from heat. Cover and let sit for about 5 minutes.
Add 1-2 tsp olive oil. Fluff couscous with a fork and make sure everything is mixed together well.
Serve warm.
If the curry is too spicy or not to someone’s liking, you can sprinkle a bit of raw organic sugar or rapadura sugar on top. One of my kiddos doesn’t like spicy, but less than 1 tsp of raw sugar mixed in his serving and he was good to go.
